The word curry has been used since the medieval period, and ever since the Victorian era Britain has been incorporating Indian dishes and spices to suit the British palate. Recently, varieties of Indian curries have become increasingly popular. These include chicken tikka masala and the Balti. Actually, chicken tikka masala is now considered as one of Britain’s most tasty dishes. Therefore, British families across the UK are actively adopting Asian spices into their meal plans. Some are even incorporating leftovers from traditional Sunday roasts and transferring them into a variety of scrumptious recipes. So, if over the weekend you’ve served your family a delicious lamb roast, here are some Indian recipes that you may want to try…
Flavoursome lamb curry
Firstly, fry a chopped onion over a medium heated stove and add in a small tablespoon of vegetable oil. Add grated ginger and two chopped garlic cloves. Stir until sizzling while adding in another tablespoon of oil and a dash of curry powder. Cook this for roughly a minute and add the leftover lamb. If there’s any leftover stock or gravy add that in too.
Add some tomato purée and a handful of cherry tomatoes. You should let this simmer until there’s a thick curry paste forming. Add some Greek yoghurt for some texture and finely chopped coriander. Alongside this process, cook some basmati rice. When the curry has formed a good consistency, you can then serve together and tuck in!
Heat a tablespoon of vegetable oil in a frying pan over a high heat. Add in your leftover lamb until crisp. Alongside this, make a salsa with cherry tomatoes, fresh coriander and half a red onion. Mix it all together and season with some salt and pepper. Why not try a dash of Tabasco too!
If you fancy adding guacamole, mash a couple of avocados with a little limb and a pinch of salt. Add a clove of crushed garlic and some chopped coriander.
Put the lamb into some tacos, top with the guacamole and salsa and serve with some jalapeno chillies….yum!
Stir a couple of teaspoons of harissa paste into 4-6tbsp of mayonnaise. Heat some wraps and add all of your leftovers onto them. Do this will the harissa mayonnaise as well. Slice some dill pickles lengthways and shred some lettuce and flat-leaf parsley. Season and add to the wrap… enjoy!
